Lead status and Do Not Knock
How status differs from an outcome, and what marking Do Not Knock actually does.

Every lead carries one status. Your company defines the list, typically something like New, Contacted, Appointment Set, Under Contract, Dead and Do Not Knock.
Anyone can change a lead's status at any time, from the property page. There is no permission on it and no time limit.
Status is not an outcome
They answer different questions and it is worth keeping them straight.
An outcome records what happened during one specific contact. It is history. It is only editable for 10 minutes.
A status records where the lead stands right now. It is current state, and it is meant to be changed as often as reality changes.
A knock at 10am with the outcome "Left a Note" is true forever. If the owner calls back at 2pm and books a meeting, you change the status to Appointment Set. You do not go back and rewrite the morning's knock.
Do Not Knock
One status in the list can be marked as Do Not Knock. Leads with it are hidden from the Properties list by default, behind the Hide Do-Not-Knock switch in the filter drawer.
This works off a flag on the status rather than its name, so an admin can rename the status without those leads quietly reappearing in everyone's list.
Marking a lead Do Not Knock does not delete anything and does not stop you opening the lead directly. It takes it out of the pool you work from.
Automatic changes
Your company can set up rules that change a lead's status when a particular outcome is logged. If a status changes on its own after you log something, that is why.
